Thyme 'Doone Valley' has the beautiful flavour of Lemon Thyme but with gorgeous green/gold variegated leaves which makes for a real showstopper in the garden. Whether you're limited to planting in containers only, or free to fill entire borders with pretty green foliage this variety is low-maintenance yet absolutely beautiful. Due to its low growing compact nature, it works well for ground cover, as well as in vertical vessels and hanging baskets as it's beautiful foliage trails down the side.

In the late summer you'll also get to enjoy a flourish of dark purple flowers which the bees and butterflies will go mad for. These are edible too, and look pretty incredible if you freeze them into ice cubes to save for your next dinner party.

In terms of culinary uses, Doone Valley is a versatile plant which is going to enhance so many of your dishes. Sprinkle the leaves fresh on pizzas and pastas, toss them into a summer salad, infuse them into oils or chop them into flavoured butters, the uses are almost endless. Plus, if you have surplus you can always dehydrate them to be saved in jars for later.
